Prepare fruit & herbs

Trim and measure
Peel, core, and roughly chop fresh pineapple until you have about 2 cups. Juice 2 medium limes to yield approximately 60 ml (about 1/4 cup). Pick and lightly rinse 12 fresh mint leaves; pat dry.

Place the chopped pineapple, lime juice, and mint leaves into the blender. Reserve 2 mint leaves and two lime wheels/wedges for garnish.
Blend

Add 240 ml cold water and 30 ml simple syrup (or agave) to the blender with the pineapple, lime juice, and mint. Add half of the ice (about 1 cup) if you want a slushier texture while blending; otherwise blend without ice for a smoother, less frosty finish.

Secure lid and blend on high for 30–45 seconds, or until pineapple is fully pureed and mint is evenly distributed. Stop and scrape down the sides once if needed. Taste and adjust sweetness by adding up to another 15 ml simple syrup if desired.

Fill two serving glasses with the remaining ice (about 1 cup split between glasses). Divide the Bahia Breeze between the glasses. Garnish each with a reserved lime wheel/wedge and a small mint sprig. Optionally slap the mint lightly between your palms before garnishing to release aroma.

Serve immediately with a straw. Stir once before drinking if the mixture has settled.
