1. Cook the Pasta

In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

2. Make the Cheese Sauce

In the same pot, melt the butter over medium heat. Stir in the flour, salt, black pepper, garlic powder, and mustard powder, and cook for about 1 minute until bubbly. Gradually whisk in the milk, stirring constantly until the mixture thickens.

3. Add the Cheese

Reduce the heat to low and add the shredded cheddar and Monterey Jack cheese to the sauce. Stir until the cheese is melted and smooth.

4. Combine Pasta and Sauce

Add the cooked macaroni to the cheese sauce and stir until well coated. Cook for an additional 2-3 minutes until heated through.

5. Serve

Serve the mac and cheese hot, garnished with extra cheese or breadcrumbs if desired.
