Cook steak
Heat a heavy skillet or grill over high heat until smoking hot. Add 1 tsp olive oil to pan. Sear the steak 3–4 minutes per side for medium-rare (internal temp 130–135°F / 54–57°C), longer for desired doneness. Remove to a cutting board and rest 8–10 minutes, then thinly slice against the grain.

Prepare onions
Peel onion and slice into 1/2-inch rings. Separate into individual rings and pat dry with paper towels.

Make batter
In a bowl whisk together flour, cornstarch, baking powder, salt and pepper. Gradually whisk in cold sparkling water or beer until a smooth batter forms (thicker than pancake batter but still coat-able). Keep batter cold.

Fry onion rings
Heat vegetable oil in a heavy pot to 360°F (182°C) or medium-high until shimmering. Working in batches, dip onion rings in batter, allow excess to drip off, then fry 2–3 minutes until golden and crisp. Remove to a rack or paper towel-lined tray and season immediately with a pinch of salt.
Sautéed Mushrooms

Cook mushrooms
Heat a large skillet over medium-high heat. Add butter and 1 tsp olive oil. When butter foams, add minced shallot and sauté 30 seconds. Add sliced mushrooms in a single layer and cook undisturbed 3–4 minutes until browned. Stir, add garlic and thyme, cook 30–60 seconds until fragrant. Season with salt and pepper and remove from heat.

Sauce
Mix mayonnaise and Dijon mustard. Spread roughly 2 tbs mayo mixture on each bottom roll and a light smear on the top.
