Method
Basic Soup Base (same order as ingredients)

Add the minced garlic and cook 30–60 seconds until fragrant, taking care not to brown it.

Optional roux for slight thickening
If you want a slightly thicker, velvety soup, sprinkle the flour over the softened vegetables and stir constantly for 1–2 minutes to cook the raw flour taste. Gradually whisk in 1 cup of the broth to make a smooth paste before adding the remaining liquids.

Pour in the remaining broth and water, add the bay leaf and thyme sprigs, then bring the pot to a gentle simmer.

Season with 1 1/2 teaspoons salt and 3/4 teaspoon freshly ground black pepper. Taste and adjust later once add-ins are included.

Let the base simmer gently for 15–20 minutes to meld flavors and to soften the carrots and celery completely.

Remove and discard the thyme sprigs and bay leaf.

For cooked chicken or sausage
If using cooked chicken or sausage, add it to the pot and heat through for 5–7 minutes so the flavors combine. Taste and adjust salt and pepper.

For cooked lentils or beans
Stir in cooked lentils or other beans and simmer gently 5–7 minutes to warm. Add extra broth if the soup seems too thick.

For roasted seasonal vegetables
Fold roasted vegetables into the simmering base and warm for 3–4 minutes so they don’t lose their texture.
Finishing & Serving

If making a cream-style soup, lower the heat and stir in the heavy cream or coconut milk. Heat gently — do not boil — for 2–3 minutes to incorporate. Adjust seasoning with the remaining 1/2 teaspoon salt and 1/4 tsp pepper, or to taste.

For a brighter finish, stir in the fresh lemon juice. Taste and adjust salt and pepper as needed.

Ladle the soup into bowls. Garnish with chopped parsley or chives, a sprinkle of grated Parmesan (if desired), and a few croutons or a slice of crusty bread. Add chili flakes for heat if desired.
