Make dough
In a large bowl, whisk together 1.5 cups all-purpose flour, 1 tsp salt, and 1 tsp granulated sugar. Add 6 tablespoons cold, cubed unsalted butter. Using a pastry cutter or your fingertips, cut the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces remaining.

Add water
Drizzle 3 tablespoons ice water over the mixture, 1 tablespoon at a time, gently tossing with a fork after each addition until the dough just comes together when pinched. Do not overwork.

Chill
Turn the dough out onto a lightly floured surface, press into a disc, wrap tightly in plastic, and refrigerate at least 30 minutes (up to 2 days) before rolling.

Roll and fit
On a lightly floured surface, roll the chilled dough into a 12-inch circle about 1/8-inch thick. Gently transfer to a 9-inch pie plate, trim overhang to about 1/2 inch, and flute or crimp the edge as desired. Refrigerate while you prepare the filling.

Prepare apples
Place 4 cups thinly sliced apples in a large bowl and toss with 1 tablespoon lemon juice to prevent browning.

Mix dry filling ingredients
In a small bowl combine 1 cup granulated sugar, 1/4 cup packed light brown sugar, 2 tablespoons cornstarch, 1 teaspoon ground cinnamon, and 1/4 teaspoon ground nutmeg. Mix until homogeneous.

Combine filling
Sprinkle the sugar-cornstarch-spice mixture over the apples and toss gently to coat evenly. Let sit 5–10 minutes to allow juices to draw out and cornstarch to begin hydrating.

Assemble filling in crust
Spoon the apple mixture into the prepared pie crust in an even mound. Dot the top of the filling with 2 tablespoons small pieces of unsalted butter.

Bake
Preheat the oven to 400°F (200°C). Place the pie on a rimmed baking sheet to catch drips. Bake 20 minutes at 400°F, then reduce oven temperature to 350°F (175°C) and continue baking 35–45 minutes more until the crust is golden and the filling is bubbly. If the crust browns too quickly, tent loosely with foil after 30 minutes of baking at 350°F.

Cool and serve
Remove the pie from the oven and let cool on a wire rack at least 2 hours to allow the filling to set. To serve a slice, cut with a sharp knife and, if desired, serve with 1 scoop vanilla ice cream (add $1.95).
