Prepare riblets
Pat the pork riblets dry with paper towels. Trim any large pieces of excess fat so pieces are roughly uniform in size (about 1–2 inches). Place the riblets in a large bowl.

Season with salt and pepper and pour in the vegetable oil. Toss to coat evenly—oil helps the seasoning adhere and promotes crisping during cooking.

Make seasoning
In a small bowl, combine paprika, smoked paprika (if using), garlic powder, onion powder, brown sugar, dry mustard, oregano, cumin and cayenne. Mix thoroughly so the brown sugar is evenly distributed.

Sprinkle the seasoning blend over the oiled riblets and toss until every piece is well coated. Lightly press the rub into the meat with your hands so it adheres. For best flavor, let the seasoned riblets rest in the refrigerator for 30 minutes to 2 hours (optional).

Oven method (recommended for convenience)
Preheat oven to 425°F (220°C). Arrange the seasoned riblets in a single layer on a rimmed baking sheet lined with foil and a wire rack set inside the sheet (rack helps air circulate and crisp all sides). Roast for 18–22 minutes, then flip each piece and roast an additional 12–15 minutes, or until edges are caramelized and internal temperature reaches at least 145°F (63°C) and pieces are tender with crisped exterior.

Skillet method (quicker, more hands-on)
Heat a large heavy skillet (cast-iron preferred) over medium-high heat. Add a thin film of neutral oil. When shimmering, add riblets in a single layer (work in batches to avoid overcrowding). Sear undisturbed for 3–4 minutes per side until deeply browned and crisp; reduce heat to medium and continue cooking, turning occasionally, until cooked through and tender, about 8–10 minutes total per batch.

Make finish glaze & toss
While the riblets finish cooking, whisk together apple cider vinegar and honey in a small bowl. When riblets are done, return hot riblets to a warm skillet (or place on a sheet pan) and add the butter. Pour the vinegar-honey mixture over the riblets and quickly toss or stir over low heat for 1–2 minutes so butter melts and the glaze coats the pieces and reduces slightly. Taste and adjust: add a pinch more salt or a squeeze of lemon if desired.

Transfer riblets to a serving platter. Sprinkle chopped parsley over the top for color and freshness. Serve immediately with lemon wedges on the side for guests to squeeze over the riblets.
