Chicken Tenders

Prep the chicken
Pat the chicken tenders dry with paper towels. Season both sides with kosher salt, 1/2 tsp black pepper, garlic powder, and paprika. Let rest while you set up the breading stations (5–10 minutes).

Set up stations
Arrange three shallow bowls or rimmed plates: one with the flour (3 tbs) mixed with cornstarch; one with the eggs beaten with milk and optional hot sauce; one with the breadcrumbs, Parmesan, 1/2 tsp salt, and 1/4 tsp black pepper. Ensure the breadcrumbs are evenly combined.

Dredge and bread
Working one at a time, dredge each seasoned tender in the flour mixture, shaking off excess. Dip into the egg wash, letting excess drip back into the bowl. Press into the breadcrumb mixture to coat thoroughly. For extra-crispy tenders, double-dip: return to the egg wash and breadcrumbs once more. Place breaded tenders on a wire rack and let rest 10 minutes to set the coating.

Heat oil
Pour oil into a deep skillet or Dutch oven to a depth of about 1 to 1 1/2 inches (about 2 cups). Heat over medium-high until oil reaches 350°F (175°C) or a small piece of breadcrumb sizzles and browns in ~30 seconds.

Fry tenders
Fry the tenders in batches without crowding the pan, 3–5 minutes per side depending on thickness, until golden brown and internal temperature registers 165°F (74°C). Flip once using tongs. Adjust heat to maintain oil temperature between 325–350°F. Transfer cooked tenders to a wire rack set over a baking sheet; keep warm in a 200°F (95°C) oven if needed while you finish remaining batches.

Finish
When all tenders are cooked, let rest 2–3 minutes. If desired, lightly season again with a pinch of salt.
Sweet Thai Chilli Sauce

If using store-bought sauce, transfer 1/2 cup to a small serving bowl and stir in rice vinegar and lime juice to brighten the flavor; garnish with chopped cilantro if using. Taste and adjust acidity or sweetness as desired.
Honey Dill Sauce

In a small bowl, whisk together mayonnaise, yogurt (or sour cream), honey, chopped dill, lemon juice, salt, and pepper until smooth. Taste and adjust honey or lemon to preference. Chill briefly if time allows to let flavors meld.
