Make the house spice blend

In a small shallow dish combine coarse salt, smoked paprika, crushed celery seed, ground black pepper and chili flakes. Mix thoroughly so the spices are evenly distributed.

Take a highball or pint glass and run a lime wedge around the rim to moisten it. Dip the rim into the spice blend, rotate to coat evenly, then set the glass aside.

Prepare garnishes: cut a lime wedge for the drink, rinse and trim a celery stalk (if using), and have pickle spear/green bean/shrimp ready on a skewer if using an extra garnish.

Fill the rimmed glass about three-quarters full with fresh ice.

In the prepared glass (or a mixing glass if you prefer), add 2 oz vodka, 1 tsp Worcestershire sauce, 3 dashes hot sauce and 0.5 oz fresh lime juice.

Pour in 6 oz Clamato juice over the vodka and seasonings. Stir gently with a bar spoon (about 10–15 seconds) to combine without over-diluting.

Taste and adjust seasoning: if you want more savory depth, add another 1/4–1/2 tsp Worcestershire; for more heat add additional dashes of hot sauce; for brightness add a little extra lime juice. Sprinkle about 1/4 tsp celery salt over the top if desired and give a light stir.

Garnish by placing the celery stalk (or chosen garnish) in the glass and resting the lime wedge on the rim. Serve immediately with a stirring straw.
