Toss with cornstarch and oil
Preheat the oven to 425°F (220°C) and position a rack in the middle. In a large bowl, combine the dried potato sticks with 2 tablespoons cornstarch and toss to coat evenly. Drizzle with 2 tablespoons olive oil and toss again so each fry is lightly coated. Season with 1 teaspoon sea salt, 1 teaspoon freshly ground black pepper and 1 teaspoon garlic powder; toss to distribute.

Arrange and bake
Arrange potatoes in a single layer on two baking sheets lined with parchment paper or a silicone mat (leave space between sticks; use two sheets if necessary to avoid crowding). Bake 20 minutes, then rotate pans and flip fries. Continue baking another 12–18 minutes until fries are golden and edges are crisp. Total bake time ~32–38 minutes depending on thickness.

Make garlic butter and toss
While fries bake, melt 3 tablespoons unsalted butter in a small saucepan over low heat. Add 3 minced garlic cloves and cook gently 30–45 seconds until fragrant (do not brown). Remove from heat and stir in 1 teaspoon lemon juice. When fries are done, transfer hot fries to a large bowl, pour the garlic butter over them and toss to coat evenly.

Finish with asiago and parsley
Immediately sprinkle 3 ounces grated asiago cheese over the tossed fries so the warm fries melt the cheese slightly. Add 2 tablespoons chopped fresh parsley and toss lightly once more. Taste and adjust seasoning with a pinch additional salt or pepper if needed. Serve immediately.

In a medium bowl combine 1 cup mayonnaise and 1 tablespoon sour cream until smooth.

Add flavorings
Stir in 1 ounce grated asiago cheese, 1 minced garlic clove, 1/2 teaspoon lemon zest, 1/2 teaspoon dried oregano, 1/2 teaspoon hot sauce (optional), 1/4 teaspoon salt and 1/4 teaspoon black pepper. Mix thoroughly and taste; adjust salt, lemon or hot sauce to preference.

Chill and serve
Cover and refrigerate the dip for at least 15 minutes to allow flavors to meld. Bring to cool room temperature (5–10 minutes) before serving with the hot garlic asiago fries.
