Bake bacon
Preheat oven to 400°F (200°C). Line a rimmed baking sheet with foil and place a wire rack on top. Lay 12 slices of bacon in a single layer on the rack. If making candied bacon, sprinkle brown sugar evenly over strips and crack a little black pepper. Bake 15–20 minutes until edges are crisp but not burnt. Remove and let cool on rack; bacon will firm as it cools.

Make custard
In a large shallow bowl or baking dish, whisk together 6 eggs, 1 cup whole milk, 1/2 cup heavy cream, 2 tablespoons sugar, 2 teaspoons vanilla, 1 teaspoon ground cinnamon and 1/4 teaspoon salt until smooth and slightly frothy.

Soak bread
Heat a large skillet or griddle over medium heat and add 1 tablespoon butter to melt. Working in batches, dip each slice of brioche into the custard for about 10–15 seconds per side, allowing it to absorb but not become falling-apart soggy. Let excess drip off and set on a rack or tray. Repeat until you have 8 soaked slices.

Cook French toast
Add remaining butter (about 2 tablespoons) to the skillet as needed between batches. Cook soaked slices 2–3 minutes per side, until golden brown and set. Keep finished slices warm on a baking sheet in a 200°F (95°C) oven while you finish remaining slices.

Stacking strategy
Prepare to assemble alternating layers: French toast, bacon, French toast, bacon, French toast, bacon — ending with a French toast slice on top to create the 'mountain' layers. Reserve a few bacon slices for garnish if desired.

Cook topping eggs
About 5 minutes before serving, heat a nonstick skillet over medium-low and add a small pat of butter or neutral oil. Crack 2 large eggs and cook to your preference: sunny-side up (covered briefly so whites set), over-easy, or fried until yolks reach desired doneness. Season with 1/4 teaspoon salt and 1/4 teaspoon black pepper. Keep warm.

Assemble the French Toast Mountain
On a large serving plate, place one French toast slice. Top with 2 bacon slices. Add a second French toast slice, then 2 more bacon slices. Repeat so you have three French toast layers and three bacon layers stacked (French toast as top layer). Tuck any extra bacon decoratively around the base and reserve 1–2 slices for garnish if you like.

Finish and serve
Drizzle maple syrup over the stacked mountain, dust lightly with powdered sugar and scatter fresh berries around if using. Place the two cooked eggs on top of the mountain or alongside it, depending on how you prefer presentation. Serve immediately so toast stays warm and eggs are fresh.
