Eggs & Toast
Method
Eggs & Toast
- 1
Prepare equipment and ingredients
Gather a nonstick or well-seasoned skillet, a spatula, a plate, a toaster (or oven broiler/pan), and a small bowl if making scrambled eggs. Take eggs out of the refrigerator so they’re not ice-cold (5 minutes) and measure butter, salt, and pepper.
- 2
Toast the bread
Place the 2 slices of bread in a toaster and toast to your desired level (light to medium recommended). If you don't have a toaster, heat a clean skillet over medium heat and toast each side of the bread 1–2 minutes until golden. Once toasted, spread the 1 tablespoon butter evenly over the hot toast and set on a plate.

Choose egg style — sunny-side up or fried (over-easy/medium/hard)
Heat a nonstick skillet over medium-low heat and add 1 teaspoon butter or oil. Crack the 2 eggs gently into the skillet, keeping them separate. For sunny-side up: cook undisturbed for about 3–4 minutes until whites are set but yolks remain runny. For over-easy/medium/hard: cook 2–3 minutes until whites are mostly set, then carefully flip with a spatula and cook an additional 15–30 seconds for over-easy (runny yolk), 45–60 seconds for over-medium (slightly set yolk), or 1.5–2 minutes for over-hard (fully set yolk). Season with 1/4 teaspoon salt and 1/8 teaspoon black pepper while cooking.

Choose egg style — scrambled
If making scrambled eggs, crack the 2 eggs into a small bowl, add a pinch of salt and pepper, and beat lightly until blended. Heat the skillet over medium-low and add 1 teaspoon butter or oil. Pour the eggs into the pan and let them sit undisturbed for about 10–15 seconds. Using a spatula, gently push the set edges toward the center, allowing uncooked egg to flow out. Continue folding every 10–15 seconds until curds are soft and just set, about 1–2 minutes total. Remove from heat slightly before fully set — residual heat will finish them.
