Method
Coffee Preparation
- 1
Measure and grind
Measure 2 tablespoons (about 10–12 g) of coffee. If using whole beans, grind to a medium-coarse grind for a pour-over or drip brewer, or medium-fine for a cone/filter. Use a burr grinder if available for even extraction.
- 2
Heat water
Heat 8 fl oz (about 240 ml) of fresh filtered water in a kettle to about 195–205°F (90–96°C). If you do not have a thermometer, bring to a boil and let sit 30 seconds.
- 3
Prepare brewer
Place a paper filter in your dripper or ensure your drip machine basket is clean. Rinse the paper filter with hot water to remove paper taste and warm the brewer and cup; discard rinse water.
- 4
Bloom (for pour-over or manual methods)
Add the ground coffee to the filter. Pour just enough hot water (about 30–40 ml) to wet the grounds evenly. Allow coffee to bloom for 30–45 seconds to release trapped CO2.
- 5
Brew
Continue pouring remaining hot water in slow, steady concentric circles until you reach 8 fl oz total. If using an automatic drip brewer, start the brew cycle and let it finish. Total contact time should be about 2.5–4 minutes depending on method.
- 6
Finish and serve
Remove dripper or turn off machine. Pour brewed coffee into a cup. Add optional sweetener and/or 2 tablespoons milk or cream to taste, stirring until combined. Serve hot.
Tea Preparation
- 7
Heat water to appropriate temperature
Heat 8 fl oz (about 240 ml) of fresh filtered water. For black tea bring to a rolling boil (212°F/100°C). For green or white tea heat to 160–185°F (70–85°C). Herbal tisanes can be brewed with boiling water.
- 8
Pre-warm cup (optional)
Pour a little hot water into the cup, swirl to warm, and discard. This helps maintain brewing temperature.
- 9
Steep tea
Place 1 tea bag or 1 teaspoon (for loose leaf) into an infuser in the cup. Pour the heated water over the tea. Steep for the recommended time: black tea 3–5 minutes, green tea 2–3 minutes, herbal 5–7 minutes. Adjust time for strength preference.
