Prepare Filling

Heat aromatics

Place a large skillet over medium heat and add 1 tablespoon of oil or 1/2 tablespoon butter. When hot, add the chopped onion and bell pepper. Sauté, stirring occasionally, until softened and translucent, about 4–5 minutes.

Add garlic and spices

Add minced garlic to the skillet and cook 30–45 seconds until fragrant. Stir in ground cumin, chili powder, smoked paprika, salt, and black pepper and cook 15–30 seconds to bloom the spices.

Add chicken and finish

Add the cooked shredded chicken to the skillet and toss to combine with the aromatics and spices. Cook 2–3 minutes until heated through. Remove from heat, squeeze in the lime juice, and stir in chopped cilantro. Transfer the filling to a bowl and set aside.

Assemble & Cook Quesadillas

Preheat pan

Wipe the skillet clean and return it to medium-low heat. Add the remaining 1 tablespoon oil or 1/2 tablespoon butter and swirl to coat the surface.

Assemble quesadilla

Place one flour tortilla flat on a plate or work surface. Sprinkle about 1/4 cup shredded cheddar and 1/4 cup Monterey Jack evenly over half of the tortilla. Top the cheese with about 1/2 cup of the prepared chicken filling, spreading it evenly but leaving a 1/2-inch border. Sprinkle another 1/8–1/4 cup of cheese on top of the filling (this helps the top tortilla adhere). Fold the empty half of the tortilla over the filling to form a semicircle.

Cook first side

Carefully transfer the assembled quesadilla to the preheated skillet. Cook 2–3 minutes, pressing gently with a spatula occasionally, until the bottom is golden brown and the cheese begins to melt.

Flip and finish

Using a wide spatula, carefully flip the quesadilla and cook another 1.5–2 minutes until the second side is golden and the cheese is fully melted. Reduce heat slightly if the tortilla browns too quickly before the cheese melts. Transfer the cooked quesadilla to a cutting board and let rest 1 minute before slicing. Repeat assembly and cooking with the remaining tortillas, cheese, and filling, adding more oil to the pan as needed.

Serve

Cut each quesadilla into 3–4 wedges. Serve warm with sour cream, salsa, and lime wedges on the side. Garnish with extra chopped cilantro if desired.
