Prep and marinate

Prepare all ingredients: dice pork, chicken, and beef; peel and devein shrimp; mince garlic; finely chop shallot; chop pineapple and vegetables if using; beat eggs. In a bowl, whisk together 1 tablespoon light soy sauce, 1 tablespoon fish sauce, 1 teaspoon sesame oil, and a pinch of white pepper. Toss pork, chicken, and beef with half of this marinade and set aside to meld flavors while you preheat the wok.

Scramble eggs and set aside

Heat 1 tablespoon vegetable oil in a large wok or skillet over high heat. Pour in eggs and stir to scramble until just set. Remove eggs from pan and set aside with proteins.

Aromatics

Add remaining 1 tablespoon oil to the wok. Sauté garlic and shallot until fragrant and translucent (about 30 seconds).

Cook proteins in batches

Add pork to the hot wok and stir-fry until lightly browned; transfer to a plate. Add chicken and cook until nearly done, then add beef and finish cooking. Return all browned proteins to the wok.

Cook shrimp

Push protein to the side; add shrimp and cook until pink and opaque. Toss with other proteins.

Combine rice and vegetables

Add cooked jasmine rice to the wok; break up clumps with a spatula. Add peas, carrots, pineapple, and half of the green onions. Drizzle with remaining marinade and additional light soy sauce and/or fish/oyster sauces; stir-fry until heated through and flavors meld.

Finish and garnish

Return eggs to the pan; season with palm sugar, chili flakes, sesame oil, and lime juice to taste; adjust salt with salt and pepper as needed. Stir in cilantro and remaining green onions. Finish with chopped peanuts and lime wedges on the side.
