Soak noodles

Soak glass noodles in warm water for 10-15 minutes until softened. Drain well and cut into shorter lengths if desired.

Prepare eggs

Beat eggs with a pinch of salt in a small bowl and set aside.

Prep aromatics and vegetables

Mince garlic and prepare onion; slice cabbage and mushrooms; rinse and drain bean sprouts; trim green onions.

Heat wok and oil

Heat 2 tablespoons oil in a wok or large skillet over high heat until shimmering.

Cook eggs

Pour in beaten eggs, scramble until just set. Push to one side and remove to a plate.

Stir-fry aromatics

Add remaining oil if needed. Stir-fry garlic and onion 20-30 seconds until fragrant.

Cook mushrooms and cabbage

Add mushrooms and cabbage; stir-fry 2-3 minutes until mushrooms soften and cabbage is slightly wilted.

Combine eggs with noodles

Return scrambled eggs to the wok. Add drained glass noodles and toss to combine.

Add soy sauce, oyster sauce, fish sauce, sugar, and white pepper. Toss well to coat noodles and vegetables evenly.

Finish with sprouts and greens

Add bean sprouts and green onions; stir-fry 1-2 minutes until sprouts are crisp-tender.

Drizzle with sesame oil, taste, and adjust salt to taste. Serve hot.
