Prep

If using fresh noodles, gently loosen and separate them. If using dried noodles, cook until just pliable according to package instructions, then drain and rinse with cool water to stop further cooking.

Make the sauce

In a small bowl, whisk together dark sweet soy sauce (2 tbsp), light soy sauce (1 tbsp), white sugar (1 tsp), and oyster sauce (1 tbsp) if using. Set aside.

Prepare aromatics and vegetables

Mince garlic. Rinse broccoli and cut into bite-size florets. Lightly beat the eggs in a small bowl.

Heat the wok

Place a large wok or skillet over high heat. Add vegetable oil and swirl to coat the surface.

Garlic and broccoli

Add minced garlic to the hot oil and stir-fry for 15–20 seconds until fragrant. Add broccoli and stir-fry 2–3 minutes until bright green and just tender.

Eggs

Push broccoli to the side of the wok, pour beaten eggs into the cleared area, and scramble until just set.

Combine noodles and sauce

Add the loosened noodles to the wok along with the prepared sauce. Toss quickly to coat evenly and cook 1–2 minutes until glossy and flavors meld. If the mixture seems dry, add a splash of water as needed.

Finish and serve

Taste and adjust with a little more light soy sauce if needed. Remove from heat and serve hot.
