Preparation

If using day-old rice, fluff it with a fork and spread on a tray to dry for a few minutes to reduce moisture.

Prepare the protein: rinse and slice into thin strips. If using raw meat, lightly season or marinate with 1/2 teaspoon soy sauce and a drizzle of sesame oil.

Beat the eggs with a pinch of salt and set aside.

Stir-Fry the Protein

Heat a wok or large skillet over high heat and add 2 tablespoons of neutral oil.

Add the protein and stir-fry until browned and cooked through. Remove and set aside.

Aromatics & Vegetables

In the same wok, add minced garlic and shallot; stir-fry until fragrant, about 20-30 seconds.

Add the mixed vegetables (and bean sprouts if using); stir-fry 2-3 minutes until they are crisp-tender.

Rice & Eggs

Push vegetables to the side. Pour in beaten eggs and scramble until just set.

Add the cooked rice to the wok; break up any clumps and stir-fry for 2-3 minutes to mix with vegetables.

Seasoning

Season with light soy sauce, fish sauce, oyster sauce, sugar, and white pepper. Stir to coat evenly.

Return the protein to the wok and mix through the rice.

Finish & Serve

Drizzle with sesame oil and fold in chopped spring onions.

Taste and adjust salt if needed. Garnish with lime wedges and optional chili flakes before serving hot.
