Rice Preparation
Rinse rice
Place the 2 cups of long-grain white rice in a fine-mesh sieve or bowl. Rinse under cold running water, swishing gently, until the water runs clear (about 30–60 seconds). Drain well. This removes excess surface starch and prevents the rice from becoming gummy.
Sauté aromatics
In a medium heavy-bottomed saucepan (with a tight-fitting lid), heat 2 tablespoons oil over medium heat until shimmering. Add the finely chopped 1/2 cup yellow onion and sauté for 3–4 minutes until softened and translucent. Stir in the minced garlic and cook 30 seconds more until fragrant, taking care not to brown the garlic.
Toast rice with spices
Add the drained rice to the pan and stir to coat the grains in the oil and aromatics. Cook, stirring, for 1–2 minutes to lightly toast the rice. Sprinkle in 1 teaspoon ground turmeric and 1/2 teaspoon ground cumin and stir to distribute evenly so the rice turns a uniform yellow color.
Add liquids and seasonings
Pour in 3 1/2 cups water, add 1 teaspoon salt, 1 bay leaf, and 1/4 teaspoon black pepper. Stir once to combine, bring the mixture to a gentle boil over medium-high heat.
Simmer covered
Once boiling, reduce heat to low so the liquid is just simmering. Cover the saucepan with a tight-fitting lid and cook undisturbed for 15 minutes. Do not lift the lid during this time.
Rest rice
After 15 minutes, turn off the heat and leave the lid on. Let the rice steam and rest for an additional 8–10 minutes to finish cooking and absorb any remaining moisture.
Finishing & Serving

Remove the lid, discard the bay leaf, and add 1 tablespoon butter (if using). Gently fluff the rice with a fork to separate the grains and incorporate the butter. Stir in 2 tablespoons chopped fresh cilantro or parsley and 1 tablespoon lime or lemon juice if using. Taste and adjust seasoning with additional salt or pepper if needed.
Transfer the yellow white rice to a serving bowl and serve hot as a side for grilled meats, stews, beans, or vegetable dishes. Leftovers keep well refrigerated in an airtight container for up to 4 days and can be reheated with a splash of water to restore moisture.
