Brine/Marinate the chicken

Place chicken pieces in a large bowl or container. Whisk buttermilk with hot sauce until combined, pour over chicken so pieces are fully submerged. Cover and refrigerate at least 4 hours or ideally overnight. This tenderizes and seasons the meat.

Prepare the dredge

In a shallow dish or rimmed baking sheet, combine 2 1/2 cups flour, cornstarch, 2 tsp kosher salt, 1 tsp black pepper, 1 tsp paprika, 1 tsp garlic powder, 1 tsp onion powder and 1/4 tsp cayenne. Whisk to distribute evenly.

Beat eggs

In a separate shallow bowl, beat the 2 eggs. You can thin with 2 tablespoons water if desired. This will be used as an intermediate binder if a double-dredge is preferred.

Dredge the chicken

Remove a piece of chicken from the buttermilk, let excess drip off, then coat thoroughly in the seasoned flour, pressing so the coating adheres. For extra-crispy chicken, dip the coated piece into beaten eggs, then back into the flour mixture for a second coating. Place coated pieces on a wire rack and let rest 10–15 minutes to set the crust.

Heat oil

Pour vegetable oil into a large heavy skillet or Dutch oven to about 1/2–3/4 inch depth (enough to come partway up the pieces) or heat for shallow frying. Heat oil over medium-high until it reaches 325–350°F (163–177°C). If you don't have a thermometer, test by dropping a pinch of flour into the oil — it should sizzle steadily but not smoke.

Fry the chicken

Working in batches, carefully add chicken pieces skin-side down into the hot oil without overcrowding. Fry until golden brown, about 6–8 minutes per side for medium pieces, adjusting time for size; internal temperature should reach 165°F (74°C). Use a splatter screen if desired. Transfer fried chicken to a wire rack set over a baking sheet and tent loosely with foil to keep warm while you fry remaining pieces.

Sauté the onions

Discard excess oil from the frying pan, leaving about 1–2 tablespoons of browned drippings (or wipe clean and heat butter). In the same skillet over medium heat, melt 4 tablespoons butter. Add the finely diced onion and a pinch of salt. Cook, stirring occasionally, until the onion is soft and beginning to brown, about 6–8 minutes. Scrape up any browned bits from the bottom — these add flavor.

Make the roux

Sprinkle 1/2 cup flour over the softened onions and stir constantly for 2–3 minutes to cook the raw flour taste and form a light roux. The mixture will thicken and become fragrant; do not let it burn.

Add stock and finish gravy

Slowly whisk in 4 cups chicken stock a little at a time to avoid lumps, bringing the mixture to a simmer. Continue to cook, whisking occasionally, until the gravy thickens to a smooth, coat-the-back-of-a-spoon consistency, about 6–10 minutes. Stir in 1/2 cup heavy cream (optional) for a richer gravy. Add Worcestershire sauce, 1 tsp black pepper, 1 tsp kosher salt (adjust to taste), and thyme. Taste and adjust seasoning.

Smother the chicken

Return the fried chicken pieces to the skillet, nestling them into the gravy skin-side up. Spoon additional gravy over the pieces. Reduce heat to low, cover, and simmer gently for 8–10 minutes to marry flavors and heat the chicken through. The gravy will slightly soften the crust while keeping the interior juicy.

Garnish and serve

Sprinkle chopped fresh parsley over the smothered chicken. Serve hot over mashed potatoes, rice, or with biscuits to soak up the gravy.
