Preheat and prepare pans

Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line with parchment and spray. Alternatively use a 9x13 pan (baking time will change).

Dry ingredients

In a large bowl whisk together the all-purpose flour, baking powder, baking soda, and fine salt until evenly combined.

Wet ingredients

In a separate large bowl, whisk the granulated sugar and eggs until combined. Add the vegetable oil, buttermilk and vanilla extract and whisk until smooth and homogenous.

Combine base batter

Pour the wet mixture into the dry ingredients and gently fold with a spatula until nearly combined. Do not overmix; a few streaks of flour are fine. The batter at this point will be a neutral base and ready for flavor-specific additions.

Add spices and carrots

To the base batter add the ground cinnamon and ground nutmeg and fold in until evenly distributed. Fold in the grated carrots, chopped walnuts (if using), and raisins (if using) until everything is evenly dispersed.

Bake carrot cake

Divide batter evenly between the prepared 9-inch pans (or pour into a 9x13). Smooth the tops. Bake in preheated 350°F (175°C) oven for 30–35 minutes for rounds, or 40–45 minutes for 9x13, until a toothpick inserted near center comes out with a few moist crumbs (not raw batter). Rotate pans halfway through if your oven heats unevenly.

Cool and frost

Let cakes cool in the pans on a wire rack for 10–15 minutes. Carefully run a knife around edges and invert onto the rack to cool completely. While cakes cool, prepare the cream cheese frosting. Beat softened cream cheese and softened butter until smooth. Gradually add confectioners' sugar and beat until fluffy, then mix in vanilla extract and optional lemon juice to taste. Once cake layers are fully cool, spread a layer of frosting between layers and over top and sides. Chill 15–30 minutes to set before slicing.

Incorporate cocoa and coffee

To the base batter add the unsweetened cocoa powder and the sour cream (or yogurt). Whisk or fold until the cocoa is fully incorporated and the batter is smooth. Stir in the hot brewed coffee (or hot water) — the batter will thin slightly and the hot liquid intensifies chocolate flavor. Fold in semisweet chocolate chips if using.

Bake chocolate cake

Divide batter evenly between prepared pans and bake at 350°F (175°C) for 30–35 minutes for 9-inch rounds (40–45 minutes for a 9x13), until a toothpick comes out with a few moist crumbs. Let cakes cool in pans 10–15 minutes before inverting onto a rack to cool completely.

Make chocolate glaze

Heat the heavy cream in a small saucepan just until it begins to simmer (do not boil). Remove from heat and pour over the chopped chocolate in a heatproof bowl. Let sit 1–2 minutes, then stir until smooth. Stir in the tablespoon of butter until glossy. Let the glaze cool 5–10 minutes to thicken slightly so it will coat the cake instead of running off.

Glaze and serve

Place cooled cake on a serving plate or rack with parchment underneath. Pour or spoon glaze over the top, letting it drip down the sides. If using two layers, you can spread a thin layer of glaze between layers or use a chocolate buttercream as preferred. Allow glaze to set 15–20 minutes before slicing.

Add lemon flavor

To the base batter add the finely grated lemon zest and the lemon extract (if using). Fold in the poppy seeds (if using). Add the fresh lemon juice and fold until batter is evenly flavored. Note: adding juice will thin the batter slightly; if it becomes too loose, bake a touch longer and check doneness by toothpick.

Prepare lemon glaze

Whisk confectioners' sugar with the 1/4 cup fresh lemon juice until smooth. If glaze is too thick to pour, add milk 1 teaspoon at a time until desired consistency. Taste and adjust: add more lemon juice for tang or more sugar to sweeten.

Glaze and finish

Place the cooled cake on a rack with parchment underneath and pour the lemon glaze over the top, allowing it to drip down the sides. For layered cakes, spread a thin layer between layers and glaze the top. Let glaze set 10–20 minutes before slicing.
