Preheat and prepare
Preheat the oven to 400°F (200°C). Wash and scrub the sweet potatoes thoroughly to remove any dirt.
Peel the sweet potatoes if you prefer a smooth texture (optional). Cut the sweet potatoes into 1/2- to 3/4-inch thick rounds or 1-inch cubes — choose a uniform size so they cook evenly.
Place the cut sweet potatoes in a large pot and cover with cold water by about 1 inch. Add a pinch of salt. Bring to a boil over high heat, then reduce to a simmer and cook until just tender when pierced with a fork, about 8–10 minutes for rounds or cubes. Do not overcook; they should hold their shape.
Drain the sweet potatoes well in a colander and let steam-dry for 2–3 minutes to remove excess moisture. Transfer to a bowl or directly to the prepared baking dish (a 9x13 or similar shallow baking dish). Spread them in an even layer.
Candied Glaze
Make the glaze
In a medium saucepan over medium heat, melt the unsalted butter. Add the brown sugar and stir until the sugar dissolves and the mixture becomes syrupy, about 2–3 minutes.
Stir in the maple syrup (or light corn syrup), ground cinnamon, ground nutmeg, salt, and orange zest if using. Bring the mixture to a gentle simmer, stirring occasionally, and cook for 1–2 minutes until slightly thickened. Remove from heat and stir in the vanilla extract.
Taste and adjust — add a bit more salt if the glaze tastes overly sweet or a bit more cinnamon if you want warmer spice notes.
Pour the warm glaze evenly over the par-cooked sweet potatoes in the baking dish, using a spatula to gently toss or turn the pieces so each piece is coated. Reserve a tablespoon or two of glaze for basting or finishing if desired.
Bake and Finish
Remove the foil and increase the oven temperature to 425°F (220°C). Bake uncovered for an additional 10–15 minutes, or until the glaze is bubbling and beginning to caramelize and the sweet potatoes are fork-tender and glossy. If you prefer a deeper caramelization, broil on high for 1–2 minutes while watching closely to avoid burning.
Add nuts and finish
If using nuts, sprinkle the chopped pecans or walnuts over the sweet potatoes during the last 5 minutes of baking so they toast slightly. Remove from oven and, if desired, sprinkle with the reserved glaze, a pinch of coarse sea salt, and chopped fresh parsley or thyme for color and contrast.
Let the candied sweet potatoes rest for 5 minutes before serving to allow the glaze to set slightly. Serve warm.
