Preheat and prepare pan

Preheat the oven to 350°F (175°C). Lightly grease a 9x9-inch (or equivalent 8x10-inch) baking dish with 1 tablespoon of the melted butter.

Prepare bread

If your bread is fresh, dry the 6 cups of bread cubes on a baking sheet in the preheating oven for 8–10 minutes until slightly dry but not browned. Place bread cubes in the prepared baking dish.

Mash bananas

In a medium bowl, mash the 2 ripe bananas with a fork until mostly smooth with a few small chunks remaining for texture.

Make custard

In a large mixing bowl, whisk together the 2 cups whole milk, 1 cup heavy cream, 3 eggs, 3 tablespoons granulated sugar, 2 tablespoons packed light brown sugar, 2 teaspoons vanilla extract, 1 teaspoon ground cinnamon, and 1 teaspoon salt until the sugars dissolve and the mixture is smooth. Whisk in the mashed bananas until combined.

Combine bread and custard

Pour the banana-custard mixture evenly over the bread cubes in the baking dish. Press gently with a spatula or your hands so the bread soaks up the liquid. Let sit for 10–15 minutes to allow the bread to absorb the custard. If using dried fruit or nuts, sprinkle half of them into the mixture before the resting period so they soak slightly.

Add butter and remaining mix-ins

Dot the surface with the remaining 2 tablespoons of melted butter and sprinkle the remaining nuts/raisins (if using) evenly across the top. Lightly press them into the top so they adhere.

Baking & Finishing

Bake

Place the baking dish on a middle oven rack and bake at 350°F (175°C) for 35–45 minutes. The pudding is done when the top is golden brown, a knife inserted into the center comes out mostly clean (a few moist crumbs are fine), and the custard is set but still slightly wobbly.

Rest

Remove from the oven and let rest for 10–15 minutes. During this time the custard will finish setting and become easier to slice.

Finish and serve

Right before serving, sprinkle the top with 1 tablespoon turbinado or coarse sugar for a slight crunch, if desired. Serve warm or at room temperature. Optional serving suggestions: vanilla ice cream, warm caramel sauce, or a dusting of powdered sugar.

Storage

Cool completely, cover tightly, and refrigerate for up to 3–4 days. Reheat individual portions in the microwave for 30–60 seconds or warm the whole dish in a 325°F (160°C) oven for 15–20 minutes.
