Preparation and Assembly
Prepare the Pork Belly
Preheat your oven to 160°C (320°F). Score the skin of the pork belly in a crisscross pattern and season generously with salt and pepper. Place the pork belly in a roasting pan and cook for about 2.5 to 3 hours, or until tender.
Crisp the Pork Belly
Increase the oven temperature to 220°C (428°F) and cook for an additional 20-30 minutes until the skin is crispy. Remove from the oven and let it rest for 10 minutes before slicing.
Assemble the Tacos
Slice the crispy pork belly into bite-sized pieces. Warm the taco shells or tortillas. On each shell, layer the sliced pork belly, drizzle with chipotle BBQ sauce, and top with the pickled corn and jalapeño relish. Finish with chopped cilantro.
Serve
Serve immediately while warm, and enjoy your delicious pork belly tacos!
