Tempura-battered Avocado

Heat oil: Pour 4–6 cups vegetable oil into a heavy-bottomed pot or deep fryer. Heat to 350°F (175°C). If you don't have a thermometer, oil should shimmer and a cube of bread browns in ~60 seconds.

Prepare avocados: Halve avocados, remove pits, and carefully peel or scoop flesh out with a large spoon to keep slices intact. Slice each avocado half into 6–8 wedges (about 1/2-inch thick). Pat slices dry on paper towels to remove surface moisture.

Dredge: Place 1/4 cup flour in a shallow bowl. Lightly toss avocado slices in flour to coat — this helps the batter adhere. Shake off excess.

Make tempura batter: In a medium bowl, whisk together 1 cup all-purpose flour, 1/4 cup cornstarch, 1/2 tsp baking powder, 1 tsp kosher salt, and 1/4 tsp black pepper. In a separate chilled bowl, lightly beat 1 large egg, then add 1 cup ice-cold sparkling water and 4 ice cubes; stir once or twice to combine. Pour the wet mixture into the dry and stir gently with chopsticks or a fork — do not overmix. The batter should be lumpy and cold. If too thick, add up to 1/4 cup cold club soda to loosen; if too thin, add a tablespoon of flour. Keep the batter bowl over another bowl with ice to keep cold as you fry.

Fry in batches: Using tongs, dip floured avocado slices into the cold batter, allowing excess to drip off, then carefully lower into the hot oil. Fry 3–4 pieces at a time (do not overcrowd) for 1.5–2 minutes, turning once, until batter is puffed and pale golden. For extra crispness, fry an additional 15–30 seconds until deeper golden. Use a slotted spoon to transfer to a wire rack set over a baking sheet; season immediately with a light pinch of salt. Keep finished pieces warm at 200°F (95°C) in the oven on a tray lightly oiled.

Finish and serve: Once all batches are fried, let rest 1–2 minutes (they crisp slightly as they cool). Arrange on a platter, dust with smoked paprika, garnish with cilantro or microgreens, and serve with both sauces and lemon wedges.
Horseradish Basil Aioli (Signature)

Make basil paste
In a small food processor or blender, combine 1/4 cup packed fresh basil, 1 tablespoon lemon juice, 1 teaspoon prepared horseradish, 1/2 minced garlic clove, and 1 teaspoon olive oil. Pulse until a smooth paste forms.

Finish aioli: In a bowl, whisk 1/2 cup mayonnaise with the basil-horseradish paste until evenly combined. Season with 1/4 tsp salt and 1/8 tsp black pepper. Adjust brightness with a few more drops of lemon if needed. Chill until ready to serve.
Smoky Chipotle Ranch

Combine bases: In a bowl, whisk together 1/2 cup sour cream, 1/4 cup mayonnaise, and 1/4 cup buttermilk until smooth.

Season: Stir in 1 tsp minced chipotle in adobo (or 1/2 tsp chipotle powder), 1 tsp dried chives, 1/2 tsp dried dill, 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/2 tablespoon fresh lime juice, and 1/4 tsp salt. Taste and adjust thickness with more buttermilk or water (1 tsp at a time) and balance flavor with more lime or chipotle as desired.

Chill: Refrigerate at least 15 minutes to let flavors meld before serving.
Assembly & Serving

Plate: Arrange tempura avocado wedges on a warmed platter. Place small bowls of horseradish basil aioli and smoky chipotle ranch alongside for dipping.

Garnish: Sprinkle avocado with a light dusting of smoked paprika and scatter cilantro leaves or microgreens. Serve immediately with lemon wedges to squeeze over the wedges for a bright finish.
