Method
Scrambled Eggs
Beat eggs
Crack the eggs into a small bowl. Add the milk, a pinch of salt and pepper. Whisk until mixture is homogenous and slightly frothy (about 20–30 seconds).
Cook eggs
Return the skillet to low heat. Pour the egg mixture into the pan. Let the eggs sit undisturbed for about 10–15 seconds until edges begin to set. Using a silicone spatula, gently push the eggs from the edges toward the center forming soft curds. Continue gently stirring and folding every 10–15 seconds until eggs are mostly set but still glossy and slightly runny—about 1.5–2 minutes total. Remove from heat; the residual heat will finish cooking.
Finish
Taste and adjust seasoning with a small additional pinch of salt and pepper if desired. Transfer eggs to a plate and cover loosely to keep warm while finishing the protein and fruit cup.
Fruit Cup
Prepare fruit while eggs or protein cooks: combine the strawberries, grapes, pineapple and blueberries in a small bowl. If using, drizzle the lemon juice and toss gently to combine. Taste and adjust fruit quantities as desired. Portion into a small serving cup or bowl and refrigerate briefly if you prefer it chilled.
Choice of Protein
Ham (pan or skillet)
If choosing sliced ham: heat a small nonstick skillet over medium heat. Add the ham slices and cook 30–60 seconds per side until heated through and lightly browned at the edges. Transfer to plate.
