Brew

Brew two shots (about 60 ml) of strong espresso or ristretto using your espresso machine or a stovetop Moka. If you don't have espresso, brew a concentrated pour-over (use about twice the normal coffee dose).

Pour 60 ml of hot water into a pre-warmed cup to temper it. Pour the brewed espresso into the cup with the hot water to create an Aussie-style strength base (similar to an Americano but stronger). Stir briefly.

Pour 150 ml whole milk and 15 ml cold heavy cream (if using) into a frothing pitcher. Purge the steam wand, then position it just below the surface and steam to create a velvety microfoam. Heat milk to about 60–65°C (140–149°F). Aim for small, dense microbubbles rather than big airy foam.

If you don't have a steam wand, heat the milk on the stovetop until warm (do not boil) and froth vigorously with a hand frother, French press (pump 20–30 times), or by shaking in a tightly sealed jar for 30–45 seconds then microwaving for 15 seconds to stabilize the foam.

Tap the pitcher gently on the counter and swirl to integrate milk and microfoam so the texture is smooth and glossy.

Pour the steamed milk over the espresso base, holding back the foam with a spoon. Finish by spooning a thin, even layer of microfoam on top — Aussie-style coffee is typically milk-forward but with a silky foam cap.

If you prefer a slightly sweet or flavored version, stir 1 tsp demerara sugar and 1/4 tsp vanilla extract into the hot espresso base before adding the milk so they dissolve evenly.

Garnish

Dust the top of the microfoam lightly with 1/4 tsp cinnamon and a tiny pinch (about 0.1 tsp) of grated nutmeg if desired. Optionally, rim the cup with a little sugar before pouring for an added sweet crunch.
