Prep and equipment
Heat water
Heat fresh water to between 190°F and 205°F (88–96°C). If you do not have a thermometer, bring water to a boil and let it rest 30 seconds.
Preheat cup
Pour a small amount of hot water into the serving cup to warm it, then discard the warming water.
Brew and assemble
Pull espresso
Using a well-tamped 18–20 g dose of finely ground coffee, pull two standard espresso shots (about 2 oz combined) into a shot glass or directly into the warmed serving cup. If using a single-shot machine, use two single shots.
Add hot water
Pour approximately 6 oz (about 180 ml) of the heated water into the cup with the espresso. Pour the hot water into the cup first or over the espresso depending on preference: - 'Long black' style: pour espresso over hot water to preserve crema. - Traditional Americano: pour hot water over espresso. Stir gently once to integrate.
Adjust strength and serve
Taste and adjust. If you prefer a milder cup, add more hot water in 1 oz increments. For creaminess, add up to 1 oz of milk. For sweetness, add 1 tsp sugar or 1 tsp simple syrup and stir until dissolved. Serve immediately while hot.
