Chill serving glasses
Place two small serving glasses or cups in the freezer for 5–10 minutes while you prepare the espresso and liqueur. Chilling keeps the ice cream from melting too quickly when the hot espresso is added.
Add liqueur
Drizzle 1 tablespoon of your chosen liqueur over the ice cream in each glass. Use amaretto for a nutty almond note, Kahlúa for coffee and chocolate depth, or a dark rum or Frangelico for different flavor profiles.
Pull espresso
Brew two fresh espresso shots (about 2 oz / 60 ml total). If you don't have an espresso machine, brew a strong 1.5–2 oz (45–60 ml) concentrated coffee using a moka pot or Aeropress.
Assemble affogato
Immediately pour one hot espresso shot over the ice cream in each glass. The hot espresso will partially melt the ice cream creating a creamy coffee-custard mixture — serve right away.
Garnish and serve
If desired, sprinkle each affogato with about 1 teaspoon shaved dark chocolate and/or 2 tablespoons crushed biscotti or cookie for texture. Serve immediately with a small spoon.
