Prepare and Assemble

    Bring cheese to temperature

    Remove the 1.5 oz piece of Manchego from the refrigerator 20–30 minutes before serving so it comes to near-room temperature. This softens flavor and texture and allows aroma and taste to open up.

    Slice or present

    If not already a ready portion, slice the Manchego into 1/4-inch (6 mm) slices or cut into a fan or small wedges so guests can easily pick pieces. Arrange the slices/wedges on a small plate or cheese board leaving a little space in the center for toppings.

    Drizzle honey

    Using about 1 teaspoon of honey, drizzle a thin, even line across the top of the arranged Manchego slices. For a slightly more decorative presentation, drizzle in a zigzag or place a small dot of honey on each wedge. Try to avoid soaking the cheese—just a light touch to complement the savory flavors.

    Season with pepper

    Lightly grind or sprinkle about 1 teaspoon of freshly ground black pepper directly over the honey-topped cheese. Taste preference varies; start with a light dusting and add more if desired. The pepper should give a bright, slightly spicy contrast to the sweet honey and nutty cheese.

    Finish and optional accompaniments

    If using, place 3 toasted baguette slices or crackers alongside the Manchego for serving. Optionally tuck a small sprig of thyme or rosemary next to the cheese for aroma and garnish. Serve immediately so the cheese is still slightly warm from room temperature for best flavor.
