Straining and Preparing Labneh

    Line and prepare strainer

    Place a fine-mesh strainer over a deep bowl. Line the strainer with a double layer of cheesecloth or a clean, thin kitchen towel, leaving enough cloth over the edges to gather the yogurt.

    Season yogurt

    In a mixing bowl, combine the 4 cups plain Greek yogurt with 1 tsp fine sea salt and 1 tablespoon lemon juice (if using). Stir gently until evenly incorporated. The salt seasons the labneh and the lemon adds subtle brightness but is optional.

    Transfer to strainer

    Spoon the seasoned yogurt into the lined strainer, smoothing the top. Gather the corners of the cheesecloth over the yogurt and tie with kitchen string or secure with a clamp so the yogurt is enclosed but air can circulate.

    Drain to desired thickness

    Place the bowl and strainer in the refrigerator. Let the yogurt drain for 12–24 hours for a thick, spreadable labneh (12 hours yields soft cream cheese–like consistency; 24 hours yields very thick/dip-like). For a firmer, sliceable labneh, drain 24–36 hours, occasionally pressing out excess whey.

    Unwrap and transfer

    After draining, unwrap the cheesecloth and transfer the labneh to a serving bowl. Taste and adjust seasoning with a pinch more salt if needed.

Finish with Toppings

    Create a shallow well

    Use the back of a spoon to make a shallow well or swirl pattern in the center of the labneh in the serving bowl. This will hold the olive oil and garnishes.

    Add olive oil and seasonings

    Pour 2–3 tablespoons of extra-virgin olive oil into the well. Sprinkle 1 teaspoon dried mint evenly over the surface and 1 teaspoon sumac, concentrating a little in the middle for color. Finish with 1 teaspoon freshly cracked black pepper.

    Add optional garnish

    If using, scatter 2 tablespoons toasted pine nuts or chopped walnuts and 4–6 fresh mint leaves over the top for texture and freshness.

To Serve

    Serve the labneh immediately at cool (not fully chilled) temperature with warm pita, crackers, or sliced vegetables. Labneh will keep covered in the refrigerator for up to 5 days; the surface olive oil may solidify—bring to room temperature before serving and stir lightly.
