Preparation
Break crackers and chocolate
Break each graham cracker sheet into two squares so you have 8 squares. If using chocolate bars that are bigger than quarter-ounce segments, break or snap each bar into 8 equal pieces (one piece per s'more). Set the pieces and crackers on a clean tray or plate so they are ready to assemble.
Prepare optional spreads
If using butter or peanut butter, soften butter to room temperature or warm peanut butter slightly so it's easy to spread. Lightly spread about 1/2 teaspoon of peanut butter or a very thin smear of butter on the inside face of 4 cracker squares (these will be bottom pieces).
Toasting marshmallows
Campfire or grill method
Skewer a marshmallow on a long roasting stick or metal skewer. Hold the marshmallow 6–8 inches from the flame or glowing coals, rotating slowly so it heats evenly. Toast until the exterior is golden brown and the interior is soft and melty, about 1–2 minutes for light toasting or 2–4 minutes for deep caramelization. Avoid placing directly into a roaring flame for too long to prevent burning.
Stovetop or gas burner method
If you don't have a campfire, hold the marshmallow on a metal skewer or long fork over a low gas burner flame or over the warming area of an electric stove. Rotate continuously and keep the marshmallow several inches above the flame; aim for even browning, 1–3 minutes. Use caution with indoor flames.
Oven broiler or toaster oven method
Preheat the broiler on high and position a rack about 6 inches below the element. Place marshmallows spaced on a foil-lined baking sheet. Broil 30–60 seconds, watching closely — marshmallows will puff and brown quickly. Remove when golden and soft.
Microwave quick-melt (not toasted)
Place one marshmallow on a graham cracker square and microwave for 7–10 seconds until the marshmallow puffs; it will not brown but will become soft and gooey. Be careful removing — it will be hot.
Assembly & Serving
Place one chocolate piece on a graham cracker square (on top of the optional spread if used). Immediately place the hot toasted marshmallow on top of the chocolate. Top the marshmallow with a second graham cracker square and press gently to spread the melted chocolate and marshmallow while keeping the sandwich intact. If using sea salt, sprinkle a tiny pinch on the melted marshmallow or chocolate before pressing together.
Allow the assembled s'more to sit for 10–20 seconds to let the chocolate soften/melt slightly, then serve warm. Repeat with remaining ingredients to make a total of 4 s'mores.
