Preheat & prepare
Preheat oven to 325°F (160°C). Line a rimmed baking sheet with parchment paper or a silicone mat.
Mix dry ingredients
In a large bowl combine 2 cups rolled oats, 1/2 cup chopped almonds, 1/4 cup chopped pecans, 1/4 cup shredded coconut, and 2 tablespoons flaxseed meal (if using). Stir in 1/2 teaspoon ground cinnamon and 1/4 teaspoon salt until evenly distributed.
Add wet ingredients
In a small bowl whisk together 3 tablespoons maple syrup or honey, 2 tablespoons neutral oil, and 1 teaspoon vanilla extract. Pour the wet mixture over the dry ingredients and stir thoroughly until the oats and nuts are evenly coated.
Bake
Spread the mixture in an even layer on the prepared baking sheet. Bake for 15–20 minutes, stirring gently once at the 10-minute mark to promote even browning. Bake until golden and fragrant and clusters form.
Cool & break
Remove from oven and let the granola cool completely on the baking sheet (it will crisp as it cools). Once cool, break into clusters. Store in an airtight container for up to 2 weeks or proceed to assemble parfaits.
Yogurt Layer
In a medium bowl, gently whisk 3 cups Greek yogurt with 2 tablespoons honey and 1 teaspoon lemon zest (if using) until smooth and slightly sweetened. Taste and adjust honey to preference.
Fruit
Wash and prepare fruit: hull and quarter strawberries, rinse blueberries, peel and slice the banana, and peel and slice the kiwi if using. Pat fruit dry with paper towels to avoid watering down the parfaits.
If you prefer softer fruit, lightly macerate the berries by tossing 1/4 cup of the strawberries and 2 tablespoons of blueberries with 1 teaspoon honey and letting sit 5–10 minutes. Otherwise use fruit fresh.
Assembly & Finishing
Choose serving glasses or bowls (4–6 small parfait glasses or 2 larger glasses). Spoon about 2–3 tablespoons of granola into the bottom of each glass as the first layer.
Add fruit: place a mixture of sliced strawberries, blueberries, banana slices, and kiwi (about 2–3 tablespoons of fruit) over the yogurt layer.
Repeat layers: add another 2–3 tablespoons granola, another 1/4 cup yogurt, and more fruit. Finish with a final sprinkle of extra granola (about 1–2 tablespoons) and a drizzle of 1/2 teaspoon to 1 tablespoon honey per parfait (adjust to taste).
Garnish: top each parfait with a mint leaf or two for color and serve immediately so the granola stays crunchy. If preparing ahead, assemble without the top granola and honey drizzle; add those right before serving.
