Choose four items

For the 'Pick 4 for 44' flight, choose any four of the component items listed. The example below assumes the selection: 4 Mini BBQ Chicken Sliders, Buffalo Cauliflower Bites (8), Truffle Fries (mini 1 cup), and Crispy Calamari (mini 1 cup). Adjust portions and packaging if customer chooses different items.

Mini BBQ Chicken Sliders (prep & assembly)

Warm 4 small slider buns (steam or toast lightly for 1–2 minutes). Reheat shredded cooked chicken (about 3/4 cup) tossed with 1 tbs BBQ sauce until hot (microwave 45–60 seconds or warm in pan). Pile equal portions of BBQ chicken onto each bun, top each with a small spoonful (about 1/4 tbs) of extra BBQ sauce and a tiny pinch of chopped parsley. Close sliders and place into one compartment of the to-go container.

Buffalo Cauliflower Bites (prep)

If using prepared cauliflower, reheat 8 pieces in a 400°F (205°C) oven or air fryer for 4–6 minutes until crisp. Toss warm cauliflower lightly with 1 tbs buffalo sauce so pieces are evenly coated. Place into container compartment with a 1 tbs cup of ranch dressing in a sealed sauce cup for dipping.

Truffle Fries (mini portion)

Reheat approximately 1 cup of fries in a 400°F (205°C) oven or air fryer for 3–5 minutes until crisp. After reheating, toss with 1 tsp truffle oil (substitute olive oil if unavailable), sprinkle 1 tsp grated Parmesan and 1/4 tsp chopped parsley, and season with a light pinch (about 1/8 tsp) sea salt and black pepper. Transfer to its compartment and include a small sachet of ketchup if requested.

Crispy Calamari (mini portion)

Reheat 1 cup fried calamari rings in a 375°F (190°C) oven for 4–6 minutes to restore crispness. Finish with a squeeze from 1 lemon wedge and a light drizzle (about 1 tsp) olive oil. Pack calamari in its own compartment and include 1 tbs sriracha mayo in a sealed sauce cup for dipping.

Alternative items (short prep notes)

Housemade Pretzel Bites: reheat 6 bites 3–4 minutes, sprinkle with coarse salt and provide mustard or cheese sauce. Loaded Tater Tots: reheat 8 tots, top with 1 tbs shredded cheese and 1 tbs bacon bits, broil 1 minute and include sour cream. Mini Caprese Skewers: assemble fresh with cherry tomato, small mozzarella ball and basil leaf; drizzle 1 tsp olive oil and season with salt and pepper. Spicy Tuna Tartare Spoons: portion 4 spoons with 2 tbs tuna mixture total, keep chilled and include chili oil on the side.

Portion sauces into sealed sauce cups: 1 tbs BBQ sauce or extra for sliders, 1 tbs ranch for cauliflower, 1 tbs sriracha mayo for calamari, and 1 small cup for any other requested sauce. Add lemon wedges (cut 2 wedges) to the container; include extra chili oil cup if spicy tuna is selected. Sprinkle remaining chopped parsley and a pinch of sea salt and pepper over the truffle fries compartment.

Packaging & Pickup

Arrange the four selected items in separate compartments of the insulated to-go container to preserve textures (fried items separated from sauced items). Place sauce cups in their compartments or in a small sauce tray. Add napkins and disposable cutlery. Close container and label with customer name and reheating instructions: "Reheat fries/calamari/cauliflower in 400°F oven or air fryer for 3–5 minutes; sliders can be briefly warmed 45–60 seconds. Keep tartare chilled."
