Prepare the Ingredients

Clean the Portobello mushrooms and remove the stems. Slice the Texas tomato and set aside.

Heat the Skillet

In a cast iron skillet, heat 1 tablespoon of chipotle garlic oil over medium-high heat.

Cook the Mushrooms

Season the mushrooms with salt and black pepper. Place them in the skillet, gill side down, and cook for about 5-6 minutes until they are browned. Flip them over and cook for an additional 3-4 minutes.

Add Cheese

In the last minute of cooking, place Oaxaca cheese on top of the mushrooms and cover the skillet to melt the cheese.

Toast the Buns

While the mushrooms are cooking, heat the remaining tablespoon of chipotle garlic oil in another skillet and toast the southern burger buns until golden brown.

Assemble the Burger

On the bottom half of each bun, layer arugula, followed by the mushroom with melted cheese, sliced tomatoes, and top with the other half of the bun.

Serve

Serve immediately and enjoy your delicious mushroom burger!
