Prepare the Ingredients
Slice the onion and roast the red peppers if not pre-roasted.
Cook the Onions
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and sauté until they are soft and translucent, about 5 minutes.
Cook the Steak
Push the onions to one side of the skillet and add the remaining tablespoon of olive oil. Add the Philly steak meat, season with salt and pepper, and cook until browned, about 5 minutes, stirring occasionally.
Combine Ingredients
Mix the onions with the steak, then add the sliced roasted red peppers. Stir to combine and cook for an additional 2 minutes.
Add Cheese
Sprinkle the shredded cheese over the meat mixture, cover the skillet, and let it cook for another 2-3 minutes until the cheese is melted.
Assemble the Sandwiches
Spoon the cheese steak mixture into the sub rolls or hoagie buns. Serve warm.
