Preparation of Rice

Cook the Rice

In a saucepan, combine 2 cups of white rice, 4 cups of water, and 1 tsp of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes or until rice is tender and water is absorbed.

Preparation of Salmon

Marinate the Salmon

In a bowl, mix 2 tbs of olive oil, 1 tsp of salt, 1 tsp of black pepper, and 2 tbs of lime juice. Coat the salmon fillets with this marinade and let them sit for 15 minutes.

Grill the Salmon

Preheat the grill to medium-high heat. Grill the marinated salmon fillets for about 5-6 minutes on each side or until cooked through and flakes easily with a fork.

Preparation of Mango Sauce

Make the Mango Sauce

In a small bowl, combine 1 cup of diced ripe mango, 2 tbs of honey, 2 tbs of chopped fresh cilantro, and 1 tbs of lime juice. Mix well and set aside.

Prepare the Salad

In a large bowl, combine 4 cups of mixed salad greens, 1 cup of halved cherry tomatoes, and 1 sliced cucumber. In a small bowl, whisk together 2 tbs of olive oil, 1 tbs of balsamic vinegar, 1 tsp of salt, and 1 tsp of black pepper. Drizzle the dressing over the salad and toss to combine.

Plate the Dish

On each plate, serve a portion of the grilled salmon, followed by a generous spoonful of mango sauce. Add a side of salad and a scoop of cooked rice. Garnish with fresh mango slices.
