Prepare the Roasted Vegetables

Preheat your oven to 425°F (220°C). Chop the vegetables into bite-sized pieces and toss them in a bowl with olive oil, salt, and black pepper. Spread them out on a baking sheet and roast for about 20-25 minutes or until they are tender and slightly caramelized.

Make the Balsamic Reduction

In a small saucepan, bring the balsamic vinegar to a simmer over medium heat. Reduce the heat to low and let it simmer until it thickens and reduces to about half its volume, approximately 10-15 minutes. Stir occasionally to prevent burning.

Pan Sear the Salmon

Heat a skillet over medium-high heat and add olive oil. Season the salmon fillets with salt and pepper. Once the skillet is hot, add the salmon skin-side down. Cook for about 4-5 minutes until the skin is crispy, then flip and cook for another 3-4 minutes until the salmon is cooked through and flakes easily.

Plate and Serve

Place the roasted vegetables on a plate, top with the pan-seared salmon, and drizzle the balsamic reduction over the top. Garnish with fresh herbs if desired.
