Prepare the Potatoes

Peel and dice the potatoes into small cubes. Boil them in salted water for about 5 minutes until slightly tender, then drain and set aside.

Cook the Meats

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced bacon and cook until crispy. Remove and set aside. In the same skillet, add breakfast sausage and cook until browned. Add the diced ham and cook for another 2 minutes. Remove and set aside with the bacon.

Sauté Vegetables and Potatoes

In the same skillet, add the remaining tablespoon of olive oil. Add the diced onions and bell peppers, cooking until soft (about 3-4 minutes). Then add the boiled potatoes, season with salt and black pepper, and cook until they are crispy and golden brown, about 8-10 minutes.

Combine and Cook Eggs

Return the cooked meats to the skillet with the crispy potatoes and vegetables, mixing everything well to combine. In a separate pan, cook the eggs over medium heat to your desired doneness (over medium is recommended).

Serve

Plate the meat lover's hash and top each serving with a cooked egg. Serve hot.
