Prepare the Salsa

In a bowl, combine the diced pineapple, tomatoes, red onion, cilantro, lime juice, minced garlic, salt, and pepper. Mix well and set aside to let the flavors meld.

Cook the Orzo

In a saucepan, bring the vegetable broth to a boil. Add the orzo and cook according to package instructions until al dente. Remove from heat and stir in chopped parsley. Set aside.

Season the Mahi Mahi

Pat the Mahi Mahi fillets dry with paper towels. Rub Cajun seasoning evenly on both sides of the fillets.

Sear the Mahi Mahi

Heat olive oil in an iron skillet over medium-high heat until hot. Carefully place the seasoned Mahi Mahi fillets in the skillet and cook for about 4-5 minutes on each side, or until the fish is cooked through and has a nice blackened crust.

Plate the blackened Mahi Mahi alongside a serving of herbed orzo and top with the pineapple tomato salsa.
