Preparation and Serving
Prepare the Calamari
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well. Dip each calamari ring into the buttermilk, then dredge in the flour mixture, ensuring each piece is well-coated.
Fry the Calamari
In a large, deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Fry the coated calamari in batches for about 2-3 minutes or until golden brown and crispy. Remove and drain on paper towels.
Prepare the Lemon Dill Aioli
In a small bowl, mix together 1/2 cup of mayonnaise, juice of 1 lemon, 1 tbsp of fresh dill, and salt to taste. Adjust the seasoning as needed.
Serve
Arrange the fried calamari on a serving platter with lemon wedges and pepperoncini. Serve with the lemon dill aioli on the side for dipping.
