Method
Fried Buttermilk Chicken Thighs
Marinate
Pat the chicken thighs dry with paper towels. In a large bowl or zip-top bag, combine buttermilk and hot sauce (if using). Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours or up to overnight to tenderize and flavor the meat.
Prepare Coating
About 30 minutes before frying, remove the chicken from the refrigerator to come slightly toward room temperature. In a shallow dish, whisk together the 2 cups all-purpose flour, cornstarch, 2 tsp kosher salt, 1 tsp black pepper, smoked paprika, garlic powder, and onion powder. Set aside.
Heat Oil
Pour oil into a large heavy skillet or Dutch oven to a depth of about 1/2"–1" (roughly 1 cup) and heat over medium-high until it reaches 350°F (175°C) or a bubble test shows steady sizzle when a pinch of flour is dropped in.
Dredge
Working one piece at a time, remove a thigh from the buttermilk, allowing excess to drip off, then dredge thoroughly in the seasoned flour mixture pressing to adhere. For an extra-crispy crust, double-dip: return the dredged thigh to the buttermilk briefly, then dredge again in the flour mixture.
Fry
Carefully lower chicken into the hot oil, skin-side down. Fry in batches (do not crowd) for 12–16 minutes per piece, turning once, until crust is deep golden brown and an instant-read thermometer inserted near the bone registers 165°F (74°C). Adjust heat as needed to maintain 325–350°F. Transfer cooked thighs to a wire rack set over a baking sheet and tent loosely with foil to keep warm.
Collard Greens
Render Bacon / Build Flavor
While the chicken fries, place a large skillet over medium heat. Add the diced bacon or ham hock and cook until fat renders and pieces are browned, about 5–7 minutes. If using bacon, remove most of the crisped pieces and leave the fat in the pan (reserve the crisp bits to stir in at the end if you like). Add 1 tsp olive oil if the pan is dry.
Cook Greens
Add the sliced collard greens to the pan and toss to wilt slightly. Pour in 1/2 cup chicken stock (or water) and 2 tbsp apple cider vinegar. Season with 1 tsp kosher salt, 1/2 tsp black pepper, and 1/4 tsp red pepper flakes if using. Reduce heat to a simmer, cover, and cook for 12–18 minutes until the greens are tender but not mushy. Taste and adjust seasoning.
Finish
If you reserved crisped bacon pieces, stir them back into the greens. Keep warm until ready to serve.
Dumplings
Make Dough
In a medium bowl, whisk together 1.5 cups flour, 1 tbsp baking powder, and 1/2 tsp kosher salt. Cut in the cold cubed butter using a pastry cutter or fingertips until the mixture resembles coarse crumbs (pea-sized bits of butter remain). Stir in the chopped parsley if using.
Steam Dumplings
Bring a large pot of salted water (or use a shallow wide skillet with 1–2 cups lightly simmering chicken stock) to a gentle simmer. Drop tablespoon-sized portions of the dough into the simmering liquid, spacing them so they don't touch. Cover the pot and steam the dumplings for 10–12 minutes until puffed and cooked through. Remove with a slotted spoon and keep warm on a plate tented with foil.
Pepper Jelly Glaze & Finishing
Make Glaze
In a small saucepan over low heat, combine 1/2 cup red pepper jelly, 1 tsp apple cider vinegar, and 1 tbsp unsalted butter. Stir until melted and glossy, about 2–3 minutes. Taste and add 1/2 tsp lemon juice if you want a brighter finish. Keep warm.
Glaze Chicken
When the chicken thighs are rested and still warm, brush a thin layer of the pepper jelly glaze over each piece or lightly spoon and let it set for a minute so it glazes the crust without making it soggy. Reserve a small amount of glaze for serving on the side.
Assemble & Serve
On each plate, place a spoonful of collard greens, top with a glazed fried chicken thigh and arrange 3–4 dumplings alongside. Spoon any reserved glaze over the chicken and garnish with chopped parsley. Serve immediately so the crust stays crisp and dumplings are warm.
