Place the bottle of Poema Brut Rosé Cava in the refrigerator for at least 3 hours before serving. Alternatively, chill in an ice bucket filled with equal parts ice and water for 20–30 minutes until the bottle is very cold (around 6–8°C / 43–46°F).

Chill the bottle

Select clean champagne flutes or sparkling wine glasses. Rinse and dry them if necessary. Pick fresh raspberries (one per glass) and prepare lemon twists by cutting thin strips of peel and twisting to release oils.

Prepare glassware and garnish

Open the bottle carefully: remove the foil, loosen the wire cage while keeping a thumb on the cork, then gently ease the cork out with a slight twist. Aim for a quiet pop rather than a loud bang to preserve bubbles.

Pour gently into each flute: tilt the glass slightly and pour about 4–5 ounces (120–150 ml) per glass to preserve effervescence and allow room for aromatics. Fill each glass about two-thirds full.

Garnish and serve: drop one fresh raspberry into each glass or perch it on the rim. Optionally add a lemon twist to each glass for aromatic lift. Serve immediately while chilled and sparkling.
