Prepare aromatics

Trim the lemongrass: remove any dry outer layers, cut off the root end and the tough top, and bruise the bottom 2–3 inches with the back of a knife or a rolling pin to release oils. Thinly slice the bruised section into 1/4-inch rounds. Peel and finely grate the ginger to measure 2 tablespoons. Mince the garlic clove and, if using, zest 1 teaspoon of lime.

Rinse rice

Place the rice in a fine-mesh sieve or bowl and rinse under cold running water, swirling with your hand, until the water runs mostly clear (about 2–3 minutes). Drain thoroughly. This removes excess surface starch and helps keep the rice grains separate.

Toast aromatics with rice

In a medium saucepan (with a tight-fitting lid), heat 2 tablespoons oil or butter over medium heat until shimmering. Add the sliced lemongrass, grated ginger, and minced garlic. Sauté for about 1–2 minutes, stirring, until fragrant but not browned. Add the drained rice and stir to coat the grains for 1 minute; this toasts the rice slightly and distributes the aromatics.

Add liquid and simmer

Add 2 1/2 cups water to the pan, then stir in 1 teaspoon kosher salt and 1 teaspoon sugar if using. Bring the mixture to a gentle boil over medium-high heat. Once boiling, reduce the heat to low so the pot is at a bare simmer, cover with the lid, and cook undisturbed for 15 minutes.

Steam off heat

After 15 minutes, remove the saucepan from the heat but keep it covered. Let the rice steam in the closed pot for an additional 10 minutes. Do not lift the lid during this time; this step finishes the rice and ensures even texture.

Finishing and serving

Fluff and season

After the 10-minute resting period, remove the lid. Use a fork to gently fluff the rice, separating the grains and distributing the lemongrass and ginger pieces. Stir in 1 teaspoon lime juice (if using) and the lime zest. Taste and adjust seasoning — add up to an additional 1/2 teaspoon salt if desired and freshly ground black pepper.

Add herbs and finish

Fold in 2 tablespoons chopped cilantro (optional) for a fresh finish. If you prefer a richer flavor, dot with 1 tablespoon additional butter and gently stir until melted and incorporated. Keep the rice covered briefly (2 minutes) before serving to let flavors meld.

Transfer the lemongrass ginger rice to a serving bowl and garnish with a few cilantro leaves. Serve hot alongside grilled proteins, curries, or vegetable mains. Leftovers keep well refrigerated for up to 3 days.
