Prepare asparagus

Rinse the asparagus under cold water and pat dry. Trim the woody ends: hold each stalk near the middle and base and bend until it snaps, or line up and cut off the bottom 1 to 1.5 inches with a knife. If stalks are very thick, use a vegetable peeler to peel the lower 2–3 inches to ensure even tenderness.

Season and finish

After cooking, transfer asparagus to a warmed platter. Immediately squeeze half of the lemon over the asparagus, then add the remaining 1 teaspoon lemon juice if desired for brightness. Sprinkle the grated Parmesan evenly over the hot asparagus so it melts slightly. Add lemon zest if using. Taste and adjust with additional salt and freshly ground black pepper as needed.

Heat a large skillet (preferably cast-iron or heavy-bottomed) over medium-high heat until hot, about 2 minutes. Add the olive oil and butter and swirl to combine; when the butter stops foaming and the fat is shimmering, add the sliced garlic and red pepper flakes. Sauté for 30–45 seconds, stirring constantly, until garlic is fragrant and just turning golden (do not burn).

Add the prepared asparagus in a single layer. If the pan is small, work in batches to avoid overcrowding. Season immediately with the coarse sea salt and half the black pepper. Let the asparagus sear undisturbed for 2–3 minutes to develop color, then toss or shake the pan to turn the stalks. Continue to cook, turning occasionally, until asparagus is crisp-tender and bright green, about 3–6 more minutes depending on thickness. Thinner stalks will need less time (3–4 minutes); very thick stalks may need up to 6–8 minutes total.

Test doneness by piercing the thickest stalk with the tip of a knife — it should meet little resistance but not be mushy. If you prefer a slightly softer texture, cover the pan for the last 1–2 minutes to steam gently.
