Prepare the Ingredients

In a skillet, cook the bacon and sausage until crispy. Remove and crumble. In the same skillet, sauté the diced onions and jalapeños until softened.

Beat the Eggs

In a mixing bowl, beat the eggs with salt and pepper until well combined.

Combine Ingredients

Add the cooked ham, bacon, sausage, sautéed onions, jalapeños, and shredded cheddar cheese to the beaten eggs. Mix well.

Cook the Omelet

Heat a non-stick skillet over medium heat. Pour the egg mixture into the skillet and cook until the edges start to set. Gently lift the edges with a spatula and tilt the skillet to allow uncooked eggs to flow to the edges.

Finishing Touch

Once the omelet is mostly set, fold it in half and cook for an additional 2-3 minutes until fully cooked. Serve hot with a side of salsa.
