Prepare the Ingredients

Thoroughly wash the spinach and chop it roughly. Dice the tomatoes, and slice the kalamata olives. Crumble the feta cheese and set all ingredients aside.

Beat the Eggs

In a bowl, crack the eggs and whisk them until well combined. Season with salt and black pepper to taste.

Cook the Spinach

In a non-stick skillet, heat the olive oil over medium heat. Add the spinach and sauté until wilted, about 2-3 minutes.

Add Other Ingredients

Once the spinach is wilted, add the diced tomatoes, sliced kalamata olives, and crumbled feta cheese to the skillet. Stir everything gently to combine.

Add the Eggs

Pour the beaten eggs over the spinach and vegetable mixture. Allow it to cook undisturbed for about 3-4 minutes, or until the eggs start to set around the edges.

Finish the Omelet

Using a spatula, gently lift the edges of the omelet and tilt the skillet to allow any uncooked egg to flow to the edges. Cook for another 1-2 minutes until the eggs are fully set.
