Prepare the Dressing

1

Make the Green Goddess Dressing

In a blender, combine Greek yogurt, fresh herbs, minced garlic, lemon juice, salt, and black pepper. Blend until smooth and creamy. Adjust seasoning to taste.

Cook the Fish

2

Pan-Seared Yukon Arctic Char

Heat olive oil in a skillet over medium-high heat. Season the Arctic Char fillets with salt and black pepper. Place the fillets skin-side down in the skillet and sear for about 4-5 minutes until the skin is crispy. Flip and cook for an additional 3-4 minutes until the fish is cooked through.

Prepare the Salad

3

Assemble the Salad

In a large bowl, toss the organic mixed greens with diced Gull Valley tomatoes and cooked buckwheat. Drizzle with Green Goddess dressing and toss gently to coat.

Serve

4

Plate the Dish

On each plate, place a serving of the salad and top it with the pan-seared Arctic Char. Drizzle extra dressing on top if desired.
