Prep Oysters

Preheat oven to 450°F (230°C). Rinse oyster shells under cold water and scrub to remove debris. Using an oyster knife, carefully shuck oysters, leaving them on the bottom shell with the liquid (liquor) intact. Discard top shells. Arrange a rimmed baking sheet with a layer (about 1/2" thick) of crushed ice or rock salt to stabilize the shells.

Place each shucked oyster on the prepared bed so they sit level and won't tip when baked.

Make Parmesan-Ancho Chile Butter

In a small bowl, combine the softened unsalted butter, ancho chile powder, grated Parmesan, minced garlic, smoked paprika, kosher salt, black pepper, and lime zest. Stir thoroughly until evenly combined and the mixture is smooth.

Taste a small bit and adjust seasoning—add a pinch more salt or a touch more lime zest if desired. Transfer mixture to a piping bag or a small spoon for easier portioning.

Make Puffed Sweet Corn

If using dried cancha or flint corn: heat neutral oil in a wide, heavy-bottomed skillet or small deep pot to 375°F (190°C). Working in small batches, carefully add a tablespoon of dried kernels to the hot oil—kernels will puff/expand rapidly. Use a slotted spoon to remove puffed corn once they puff (a few seconds). Drain on paper towel and immediately season with fine sea salt. If using popcorn kernels: you may pop them the usual way (hot oil or air popper), then toss lightly in oil and heat briefly in a 350°F oven on a sheet pan to dry/loosen and make them crisp; season with salt.

Let puffed corn cool to room temperature; it will become crisp and crunchy and is used as a finishing crisp element.

Assemble and Bake

Using the prepared butter, place about 1/2 to 3/4 teaspoon of the Parmesan-ancho butter on top of each oyster (directly on the meat/liquor). If butter is very soft, use a small spoon or piping bag to portion precisely.

Sprinkle each oyster with a small pinch (about 1/2 teaspoon) of crumbled cotija cheese. For additional Parm flavor, grate a small pinch of extra Parmesan on top if desired.

Place the baking sheet with oysters in the preheated oven and bake for 8–10 minutes, until butter is melted, edges of oyster are opaque and just beginning to curl, and topping is bubbling and lightly golden. Watch closely to avoid overcooking.

Finish and Serve

Remove oysters from oven. Immediately top each oyster with a small pinch of the puffed sweet corn (about 6–8 pieces per oyster) to add texture.

Sprinkle chopped cilantro evenly over the oysters and add an additional light dusting of cotija if desired. Serve each oyster with a lime wedge to squeeze over before eating.

Serve hot on the bed of crushed ice or salt for stability. Note: these are best eaten immediately so the puffed corn remains crisp.
