Hard boil eggs
Place eggs in a single layer in a saucepan and cover with cold water by about 1 inch. Bring to a gentle boil over medium-high heat. Once boiling, cover the pan, remove from heat, and let sit for 10–12 minutes. After time is up, transfer eggs to an ice bath for at least 10 minutes to stop cooking and make peeling easier.
Peel and halve
Crack and peel cooled eggs. Slice each egg lengthwise and carefully remove yolks into a medium bowl. Arrange whites on a serving tray or platter with the cavity up.
Make filling
Using a fork or small whisk, mash the egg yolks until mostly smooth. Add mayonnaise, Dijon mustard, white wine vinegar, finely chopped relish, chopped dill, 2 tsp dry ranch seasoning, hot sauce (if using), salt, and black pepper. Mix until creamy and fully combined. Taste and adjust seasoning — add more ranch seasoning, salt, or hot sauce as preferred.
Pipe or spoon filling
Transfer the filling to a piping bag fitted with a large round or star tip, or use a zip-top bag with the corner snipped. Pipe or spoon the yolk mixture into each egg white cavity, building a small mound so garnishes can be placed on top. Smooth or swirl the tops as desired.
Garnish & Serve
Top each deviled egg with half a teardrop pepper, point facing outward for presentation. If the peppers are large, trim to fit; if using pickled peppers, pat dry before placing.
Sprinkle each egg lightly with extra ranch dust (about a pinch per egg) and a small pinch of smoked paprika for color, if desired. Scatter thinly sliced chives over the platter.
Place a small dill sprig beside or tucked into the filling on each egg for a fresh herb finish.
Chill eggs in the refrigerator for at least 20 minutes before serving to allow flavors to meld. Serve chilled. Leftovers keep covered in the refrigerator up to 2 days (fillings may soften egg whites slightly over time).
Note: To make homemade ranch seasoning (approx. 2 tsp): combine 1 tsp dried parsley, 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/4 tsp dried dill, 1/4 tsp salt, and a pinch of black pepper. Adjust to taste.
