Method
Prep Oysters
Clean oysters under cold running water with a stiff brush to remove grit. Place on a tray of crushed ice to keep cold while you work.
Shuck oysters: hold oyster cup-side down in a towel. Insert a short, stiff oyster knife at the hinge, twist to pop, run the knife along the top shell to sever the muscle and remove the top shell. Slide the knife under the oyster to free it from the bottom shell, leaving the oyster in its half shell and retaining its liquor.
Make Garlic–Shallot–Parsley Butter
In a small bowl, combine the unsalted butter (softened), minced shallot, minced garlic, and chopped parsley. Mix thoroughly until uniform.
Add lemon juice, sea salt, and black pepper. Taste and adjust seasoning; the butter should be bright, savory, and slightly acidic to cut the oyster richness.
Spoon the butter mixture onto a small plate and refrigerate briefly (5–10 minutes) to firm slightly, which makes portioning onto oysters easier.
Assemble & Grill
Sprinkle roughly 1/2 tablespoon of finely grated Parmesan evenly over each butter-topped oyster.
Finish & Plate
Remove oysters from the grill. Immediately add a small dollop (about 1/2 teaspoon) of crème fraîche to each oyster.
Top each oyster with a small pinch (about 1/4 teaspoon) of smoked trout roe for a smoky, briny pop; adjust to taste. Garnish with a few microgreens or a pinch of extra chopped parsley if desired.
